The dining table at Vegera is a kaleidoscope of colours and tastes which are the very essence of health and freshness.
Our own virgin olive oil, the wine and agricultural products of Crete are the foundations of our diet.
The bread, organic vegetables, pulses, fruits and dried nuts all have their special place at the table. The thyme honey, eggs and dairy products from free raise animals complete our menu based on the Cretan diet.
In Crete, as well as in other Greek areas, meat eating is a ritual. In ancient Crete they would eat meat when sacrifices were made. In later times, meat was eaten on important holidays and only much later it became a custom whereby meat was eaten every Sunday or every other Sunday. A characteristic of the Cretan diet is the variety in dishes. No single dish dominates in taste, they all blend together in a savoury result.
Apart from the typical restaurant menus, the guests who will visit Vegera are in for a pleasant treat. From the moment you step foot you will feel perfectly at home.
You will not need to choose a specific dish which my mother and I cook with love every day. Immediately after you have been seated a picher of cool water Zaros will be brought to you along with your selected drinks.
Your food will be left up to us, and we will handle the choice with care just as if you were guests in our own home, taking of course into consideration your personal preferences.
Fresh bread will follow along with a large garden salad, which is different every day, and is rarely the tourist “Greek Salad”.
Next, a plate of assorted cheese and olives, 6 to 7 freshly-cooked local recipes (in quantities depending on the number of people at the table).
Fruit, jam-like pastries made by my mother and smooth raki, complete the meal (a complete meal costs 12 euro per person).
The products we use are seasonal, and most are organically grown on the village’s land as well as from the organic product market. Wild greens and herbs from Mt. Psiloriti, organic pulses, vegetables, fruits, rice and home-made pasta, cooked with olive oil of our own production and our grendmothers’ traditional recipes.
For our non-vegetarian guests we also cook one or two dishes with top-quality snails or meat cooked in a pot with unusual local recipes such as lamb or rabbit cooked in the oven and more.
For the production of these meals we use different utensils and they are not cooked at the same time as those for vegetarians.
